Hummus
Ingredients
1 medium zuchinni

1/4 cup tahini

1/4 cup oil

2 Tbsp lemon juice

1 clove garlic

1 Tsp cumin

pepper

salt

1. Peel zucchini. Place garlic and zucchini on baking sheet and bake in oven at 350F for 10-15 minutes.

Allow zucchini to cool and then squeeze out excess liquid.

2. Combine all ingredients in blender and blend until smooth. Adjust taste for lemon, cumin and salt.

3. Makes about 1 cup.

Note:

This simple almost real hummus is great as a dip, replacement for mayonnaise or other sauce.
